5 Things That Bring A Smile

Hello Everyone!!

It’s been a minute since my last blog post and it feels good to be back for my first post of 2018! I’ve been spending some time working on a vision board and thinking about my personal goals for the year. I’ve never done a vision board so it’s been fun! I’m hopeful it will keep me motivated. Do you do anything like this with the start of a new year, month, week, or day? I’m always looking for new and different ideas.

While working on my vision board, I started thinking about what makes me genuinely happy. My thought process being that I need to incorporate that into my everyday- if possible. Some days that’s no easy task. While everyone wishes their life was the way it looks on social media we know that’s not reality. Life is tough, messy, and it will break your heart. But, for all the dark there is most definitely a lot of light. And that’s what I wanted to highlight for myself and encourage you all to do as well.

So Here Goes:

Five Things That Make Me Smile

My daughter, Ella– This sweet, independent, beauty is my greatest achievement. Even on my worst day she brings a smile to my face.

Coffee-This should not come as a surprise. Hence, the name of my blog. There is something so magical about holding a cup of coffee. It’s like a security blanket for an adult. Anyone else?

Quotes-The written word is so powerful. I have several quotes that not only make me smile but provide me with inspiration. The following is one of my favorites:

Beaches-Nothing makes me as happy as water, sand, and sunshine. Instant mood boost. I always say every vacation should include a beach ( or a pool). What is your vacation must have?

Dessert Making– I’m sure you have noticed the recipes I share are usually desserts. I love making desserts. There is something so therapeutic (for me) about baking/dessert making. Plus, I get to enjoy a dessert so it’s a win/win. My latest dessert was from a recipe I found on Facebook. Here is the link: https://www.wineandglue.com/cheesecake-cake-batter-dip.html

What are some things that make you smile?

If you need a pick me up give this a try. It was heart warming for me.

Pink Thoughts & Espresso Shots

Espresso Sauce Cream Puffs…Kinda

Happiest Greetings to you and yours! I hope this post finds you enjoying the holidays and getting some rest and relaxation before the New Year. 🎉🥂I am pondering my resolutions but I’ll save (or spare) you that until my next blog post. So getting back to the task at hand: Espresso Sauce Cream Puffs.

If you have been following my little blog this December you know that I am doing one photo a day for the month of December. #decemberphotochallenge During this challenge, I came across a recipe in HyVee Seasons Magazine for Espresso Sauce Cream Puffs. They looked so dreamy and delicious and involved espresso! I decided to make them before the month was over and put them up on the blog. Reminder, I am not a pastry chef and this is a judgement free zone.

Sooo, I gave it a try (better late than never) and things did not go as planned. I’m not totally sure what went wrong but my puffs had no puff. Lol. They ended up looking more like little pancakes. So I did what any mama would do. I worked with what I had and made my husband the taste tester. And…he loved them!! So the flop in presentation did not affect the overall taste. The final product:

This recipe was fairly easy to follow and the ingredients are such that you could use them for other recipes. That is a win/win in my book. So even though my puff looks like a taco you should give this recipe a try. It truly is dreamy and delicious! The link below ⬇️ will take you to the HyVee Seasons Magazine website and this recipe.

Back to Basics

There are times that I stand in front of my closet and say out loud, “I have nothing to wear.” Sometimes I think if I stand there long enough my clothes will change. Spoiler Alert-they never do. Am I the only one this happens to?? I have a love/hate relationship with clothing. What is in style one day is out the next. However, if you wait long enough it will come back in style. It’s nuts. For example, today I wore a sweater I bought at Old Navy 10 years ago!! I had so many compliments on it because chunky sweaters are back in style. I will admit this sweater is very basic which is probably why it was able to stand the test of time. While statement pieces are the “fun times” of a wardrobe the basics are the “9-5” that get you through “clothing life”. Sometimes basic’s aren’t as fun to buy but you should try to acquire some basic pieces over time. And if you are selective your basics could last for years!!

I picked out some great clothing basics that can be mixed, matched, and hopefully worn for years to come. Here’s to hoping right? Some of these items I personally own and others are ones that I’ve come across in my search. Let me know if you have any basics you love!!! I’m always looking for new ideas!!

BP Necklace could be considered a statement piece but it’s also classic. Pair it with jeans and a t-shirt or a dress and heels. The versatility of this is endless.

Kate Spade disc studs are the perfect touch to any outfit.

BP Crossbody is an all season handbag. Stylish details, classic color, comfortable wear. I have a friend who owns this bag and it’s a good size.

BP Infinity Scarf 😍😍 I think Navy is such a great base color. It doesn’t get as much love as black but I think you would be happy with this addition.

Madewell Cotton Tee..so comfy..the epitome of basic but yet timeless. Comes in several colors.

Express Portofino Shirt- I own this in several colors. It’s perfect for work or going out. It can be worn alone or layered under a sweater. It can be worn in all seasons!!

BP Sweater Pullover- This classic number is also perfect for layering or wearing alone. It comes in a few different colors as well.

New Day open cardigan comes in gray and cream!! It might be more appropriate for cold weather but it could be useful in fall or for summer nights.

Mossimo T-shirt Dress is a perfect dress staple. I love V-Necks-they are so flattering. This could be causal or dressed up!! Just add some accessories and you are good to go!!

New Day utility vest is a great layering option and has seen increased popularity over the past couple years. I don’t think this trend will fall out of style any time soon.

Best.Jeans.Ever. So classic, so comfortable. I own these and I wish I had a couple pair. Great heavy material, don’t loose shape, and have a great look.

Mid-Rise Rockstar Skinny Jeans. Everyone needs a pair a black skinny jeans. These are affordable and fit great. Buy a couple pairs;)

Guess Carrie Heels. I’ve never loved a heel more than these. Sooo comfortable and they look great. I have them in several colors but black is the best option to maximize your options for wear!!

Sole Society Natasha boots could be worn with jeans or a dress. These beauties come in a couple color options. And aside from being adorable they offer comfort as well. Win/Win.

Old Navy has a great selection of basic flats. I love this burgundy color. I think flats are a basic part of a shoe collection. Don’t count them out!!

Last, but not least Converse tennis shoe. I have a similar pair of Converse shoes and I love them. They really complete an outfit. Great for a t-shirt dress or with a pair of jeans.

Hope this helps you add to your “basics”!!

Pink Thoughts & Espresso Shots Holiday Gift Guide

Christmas is quickly approaching and I’m already thinking about my gift giving plans. Have you started shopping? Are you finished? I do not belong in either of those categories. I tell myself every year that I will start my gift buying in October. Ha-ha!! Never happens. I have good intentions but sketchy follow through.

When it comes to gift giving I always think about two things:

1. What does the receiver of the gift like/enjoy?

2. Would I like to receive this gift?

Sounds vain doesn’t it? I swear it’s not intended to be. It has actually served me well over the years. How you ask? Well let’s be honest, sometimes you just have no clue what to get someone. You know their favorites but sometimes that well runs dry. So you have to start from scratch. For example, last Christmas one of my friends received a sampler pack of mascaras from Sephora. When she told me about it I instantly thought I want that too!! And then it hit me – I’ll get that for my sister in law. I knew her likes and interests but I didn’t want to keep getting her the same thing every year. The mascara sampler was such a great idea I knew she would love it too. And I was right, it was a hit!!

So I thought I would share some of my gifting favorites of this year! I don’t know about you but I’m always looking for new and different gift ideas. And maybe this will help you with your Christmas list too😉

This is a cute, inexpensive, perfect for all seasons gift. Do you know someone who just bought a house or loves to decorate outdoor spaces? This might be the perfect gift.

Ahhh yea. This is so true these days.

Who doesn’t want Chip & Joanna Gaines everything in their home? I love this scent and I think the jar is adorable and could definitely be recycled for another use!

Dear Husband: I want this. Is it Gin or is it Espresso? Either way it’s a great traveling mug.

First Things First.

I love this BP scarf. It’s a great accessory that could go with so many outfits. Everyone needs something with animal print on it… right?

Steaming clothing seems so much more dreamy then ironing. I also think I️ might be the last soul on earth that irons. Also, this would be great for someone who is a traveler.

I tried these on at Target and wanted to take them home with me. I resisted, but it was difficult. These are awesome!!! Buy a pair for a loved one and yourself!

Ohhh Kate Spade….

Kate Spade Take 2. These would make work at the office better. They would for me anyway.

$25 Dollars and Up

This gold and tortoise necklace is the cutest. Dress it up or dress it down. Perfect jewelry staple.

I love quilted pattern anything these days. If you follow my Instagram you might have noticed. This would be such a cute tote for work or the gym. You decide 🙂

Planner lover? Me too. I love the floral cover on this one and the fact that it’s hardcover. If you have never used a planner you should do it next year. New Years Resolution Time.

This Baublebar necklace is so stunning and classic. A must have in my book.

Llama ❤️❤️❤️

This Naked Palette is such a beautiful assortment of colors. Perfect for the lover of make-up and choices:)

This Sole Society tote comes in a two colors and I love how chic it looks with it’s simple detailing. Sold!!!

Pottery Barn has really hit the mark with this jewelry binder. This looks like it could solve hours of time spent on tangled necklaces and searching for loose stud earrings.

This Sole Society Weekender bag is so cute!! The best thing about it is the bottom zipper compartment for shoes- Genius.

I hope this was helpful in some way!! Take care and enjoy your holiday shopping!!

The Great Restaurant Debate

Is it just me or is deciding where to go out to eat sometimes a chore? It’s not that you don’t want to eat out, it’s that you don’t know where to go?#firstworldproblems

In the case of my husband and I the conversation usually goes like this:

Husband: “Where do you want to eat?”

Me: “I don’t know. You pick-I picked last time.”

Husband: “Ok, what are you hungry for?”

Me: “I have no idea.”

Husband: “Anything sound good?”

Me: “Not really. Maybe we should just order pizza.”

Let me be clear, there is nothing wrong with ordering a pizza. However, if this is a reoccurring theme in your life it might be time for an intervention.  I will admit that it is difficult for us to go some places due to having our daughter (she’s two and yesterday she had a full on meltdown because she ripped a cheese slice in half and wanted me to put it back together). So sometimes we work around what would be good for her (like ordering a pizza) as I would venture to say many parents do. But when an opportunity comes along for a night out do you have a similar conversation to the one above? If you don’t I’m jealous. If you do then this blog post was made just for you!

While writing about this “ongoing dilemma” it made me think about all the great restaurants in Des Moines. There has always been a great local restaurant scene in Des Moines but over the past 10 years the options have doubled or maybe even tripled. I think that is something to be proud of and showcased!! Go Des Moines!!

I have rounded up a couple lists of restaurant’s in the Des Moines metro. I’m hoping this will help you solve the restaurant debate so you can spend time doing more enjoyable things- like drinking wine. Just a thought;) Anyway, five of these restaurants are places that I absolutely love. And the other five are restaurants that I have been wanting to try.  In my opinion, we fall into the habit of going places we have already been because we love them so much. I’m guilty of this but it’s always fun to try something new! Be adventurous. So if you live in or close to Des Moines or are visiting the area this would be a good reference guide for local restaurants. Give these places a try- you won’t be disappointed!!

My Favorites (no particular order)

  1. Centrohttp://www.centrodesmoines.com/
  2. Splashhttp://splash-seafood.com/
  3.  Tursi’s Latin Kinghttps://m.mainstreethub.com/index.php/tursislatinking
  4. The Continentalhttp://www.continental-lounge.com/
  5. Luccahttps://www.luccadsm.net/menu/

Wanting to Try!

  1. Cheese Bar- http://www.cheesebardsm.com/
  2. Proof- http://proofrestaurant.com/
  3. Mad Meatball- http://www.themadmeatball.com/location/
  4. 801 Chophouse- https://801chophouse.com/des-moines/
  5. A Dong- http://www.adongrestaurant.com/wp-content/uploads/2017/03/adongmenu.pdf

What is your favorite local restaurant? Seriously, I want to know!! In the comments below share your favorite local restaurant with me. It might help someone pick a restaurant who is visiting your area or planning to in the future. Plus, I love food so humor me.

Social Media Meltdown

Confession: I spend to much time on social media.

I would probably cringe if I knew the amount of time I spent staring at a screen or checking my social media accounts. In my defense, I haven’t always been social media obsessed. In fact, I boycotted Facebook for several years when I was younger… I know I’m such a rebel. I do take into account that one of the reasons I have been spending more time on social media is Pink Thoughts & Espresso Shots. I love this blog and want to see it succeed and that requires time and dedication. I am hard pressed for time due to having a full time job and being a mother (this is not a poor me statement- just a fact). So any chance I have to squeeze in some blogging I do it.

As a self proclaimed lifestyle/fashion blogger it is really important to me that my pictures and my content be my own. I want this website/blog to be a reflection of me. Of the person I think I am and who I am rediscovering after motherhood. I feel like as you get older life becomes more about other’s and less about yourself and while that’s okay it can be paralyzing too.

Recently, I hit a huge blogging rut. I just kept looking up things on social media hoping that something would spark my imagination and I would come up with something “blog worthy.” But weeks passed and I had nothing. And I was so upset and disappointed. I thought this is suppose to be fun not stressful damn it! So I looked for other things to fill my “me time” instead of social media. (Cause let’s face it folks social media is great but sometimes it’s a mind fuck.) Just saying. So these past couple weeks I found other options to fill up my time and my soul. I wanted to share my ideas-just in case you think maybe social media has consumed to much of your time as well.

Here Goes—

  1. Adult Coloring Book – Did you color as a child?? I did and I loved it. There was something so special about a new set of crayons and a coloring book.  Coloring for me is relaxing and satisfying. I don’t think people realized all the benefits coloring had until recently. I spend some time at night, after my daughter goes to sleep, coloring. It’s been a nice and quiet escape. I get a break from my thoughts and actually have something to show for it…
I received this book as a gift awhile back but Amazon has a lot of similar ones if you are interested!
  2. Audio Books– I promise this is not an endorsement;) I just recently subscribed to http://www.audible.com and I love it! There are some books that I really wanted to read but there was not enough time in the day. I recently took into account that I spend about an hour in the car each day driving to and from work. So why not fill that up with something enjoyable?? Right now I’m listening to “The Devil in the White City”, by Erik Larson. It’s a non-fiction book about the 1893 Chicago Worlds Fair and a serial killer that used the fair to his advantage. I love the historical aspect of it and all the drama;) I also love getting into the car to drive to work… I know this seems wrong doesn’t it? Lol
  3. Plants– Do you have any plants at home? I have a terrible track record with plants, but I decided that I was going to be more accountable and give it another shot. So I purchased some mums-I’m starting simple.  I have been taking care of them faithfully each morning. I’ve found some satisfaction in this recent venture so I wanted to share this simple option for folks. Just a little bit of love and you get a beautiful result to enjoy.
I’m so proud of this beautiful Mum!! Flower Nerd Alert.
  4. Exercise–  I will admit that this has been a struggle for me lately. I love to run and used to the gym somewhat regularly to get my workout in. I have only made it there a couple of times lately, but I can tell the difference when I do. In the past, I have signed myself up for a race so I make myself go to the gym. But this time around I’m not there yet, but it maybe it will come.
  5. Reading– Apart from listening to Audible, I have started to read before I go to bed at night —instead of being on my phone. I love to read but sometimes the phone seemed easier?? If that makes sense? I will admit reading has been better for my sleep cycle. It’s also enjoyable. Which is a win/win in my book (no pun intended).

I hope this has been helpful in some small way- even if you’re not having a “social media meltdown.” We all go through different challenges in life but sometimes sharing the struggle can bring a feeling of kinship and normalicy.

    Mix & Match

My family and I recently went to Kansas City, MO for a short weekend trip. We made a quick stop at Legends Outlet Mall. If you are ever in that area this is such a cute place to stop and shop, eat, and find a few deals along the way!! Side note- it’s an outdoor mall so maybe visit spring, summer, fall and not in the dead of winter. Or maybe you are a really dedicated shopper and don’t care. I raise my glass to you:) I included a link below with info and directions if you want to know a little bit more.

Have I mentioned I love shopping for my daughter?? It’s better than shopping for myself. She is growing like a weed so any clothing I buy will be exclusively for that present season and not a minute longer. So I am mindful not to break the bank on clothing . But sometimes I don’t care. If I want to buy her Nike shoes that she will only wear for the better part of 6 months then I’m doing it. I know… total badass over here;) However, it’s good to have some restraint when it comes to clothing and figure out how to maximize your purchases.

We stopped at Old Navy to look for some fall clothing for my daughter. I have found that Old Navy has really affordable, on trend, durable clothing. I am here to tell you that I had to dig deep to find some restraint. There are sooooo many cute kids clothes there right now!! So I thought I would share some of the pieces that I picked and how they can be worn multiple ways:) It’s ok to spend money but see if you can make that money stretch a little by buying pieces that are interchangeable that makes all the difference. I bought 2 tops, 3 dresses, 3 pairs of pants, and boots. Out of that, I can mix and match and make roughly 14 outfits. I snapped some very ameatur outfit photos at the beginning and also below – so have a laugh and hopefully find some outfit inspiration!

    So Fall, So Good

Get ready.. it’s about to be the invasion of pumpkin flavored everything. Even if it’s a bad idea.. it will be pumpkin flavored. Don’t get me wrong, I enjoy a good pumpkin pie, muffin, latte, and maybe even a cookie or two. But let’s be realistic, no one can survive on pumpkin based food alone. I decided to round up my favorite fall recipes and put them on the blog. I’ve gathered recipes (from Pinterest) over the years and these are some of my favorites. Public Service Announcement: I am no gourmet chef but if I can make these so can you;)

    Crockpot Cheese Tortellini and Sausage

    • 1(19-ounce) bag frozen cheese tortellini
    • 1 pound sausage (preferably Italian- I used mild Italian turkey sausage)
    • 1 bag fresh spinach
    • 2 can Italian style diced tomatoes
    • 2 (12 ounce) cans low-fat chicken broth
    • 1 (8-ounce) cream cheese, cut into cubes

Brown the sausage on the stove top until cooked and crumbled. Drain the excess grease.

Add the sausage and remaining ingredients to a 6 quart slow cooker. Stir all the ingredients. (just a side note- the spinach seems overwhelming at first but don’t worry it will shrink quickly)

Cook in the crock pot, on Low for 5 hours, stirring occasionally during cooking.

I found this recipe off of Pinterest at https://www.keyingredient.com/ under the user ukiahgal67. Just wanted to give credit where credit is due!! Looks like there is a bunch of other great recipes there so if you get a chance check it out.

Cooking in the crockpot is great if you have a busy schedule or a 2 year old. Either way crockpots are awesome!
This is a hearty and very filling dish!! It would pair well with a red wine-if you are into that sort of thing;)

On to the most important part of this blog post……DESSERT!!!

Bourbon and Brown Sugar Peach Pie

Pie Crust (9- inch lattice pie)

    • 2 1/2 cups all purpose flour
    • 1 tablespoon granulated sugar
    • 1 teaspoon kosher salt
    • 1 cup (2 sticks) cold unsalted butter, cut into 1/2 inch pieces
    • 1 cup cold water
    • 1/4/ cup apple cider vinegar
    • 1 cup ice

Bourbon and Brown Sugar Peach Filling (makes enough for (9-inch lattice pie)

    • 1 pound fresh, ripe peaches (about 1 1/2 cups to 2 cups sliced) slice into 1/2 and 1 inch chunks
    • 3 tablespoons cornstarch
    • 1 1/2 “heaping” tablespoons brown sugar
    • 1 tablespoon bourbon
    • generous pinch of kosher salt
    • 1 large egg
    • granulated sugar, for sprinkling

I found this recipe on Pinterest from http://www.hummingbirdhigh.com/?m=1. She deserves all the credit for this wonderful recipe. I am going to include a link below to her recipe directions.

This was my first made from scratch pie and I really enjoyed making it. I’ll have to keep working on my dough and lattice top skills (shout out to all the ladies making pies from scratch, this is a lost art form).  The filling of this pie is absolutely delicious!🍑🍑

Hope these recipes inspire you to think outside the pumpkin box this fall!! If you try these out let me know or post some pictures and tag me on Instagram or Facebook. Happy Fall Ya’ll 🍁🍁

Pink Thoughts & Espresso Shots: Iowa State Fair Edition

My summer is officially coming to a close but I can check the Iowa State Fair off my to do list. My family and I made it there last Saturday. It was everything I hoped it would be and more. Going on a Saturday was a little crazy. I think from now on I’ll continue my past tradition of going on a weekday.

This was my daughter’s first Iowa State Fair and she loved it, like mother like daughter. It’s almost better experiencing things you love through your children. ❤️ Our first stop of the day was the petting zoo and Little Hands on the Farm. This was a first for me and even though I got peed on (long story) and felt like I was standing on the surface of the sun it was a good time.

Another first this year was “The Big Slide.” Just to be clear, I love heights. But climbing to the top of that slide and feeling it sway ever so slightly is stomach dropping. But the ride down is worth it and so is hearing your daughter laugh. So naturally we went twice. Our next stop was the cattle, horses, sheep, and swine. So many animals, people, and smells. It’s really something to behold. We managed to see the Big Boar… damnnn son…. that guy was huge!!

Clearly, by this point we had worked up an appetite. So we did what people at the fair do best–EAT.  We had mini donuts and garlic cheese curds!!!! Soooo yummy!!!! Yes, we ate other things. No shame in my fair food game. There was so many new foods this year like apple tacos, cookie dough, churro fries, and the Pork Almighty. Just to name a few.

    I know right.

    Food is the best.

We stopped at the Bill Riley Talent show and watched some talented young Iowans sing, dance, and do some Yo-Yo tricks!! So cool. Ella loved it and started showing people her dance moves. I guess once you feel the rhythm there is no looking back. She got that from her mama…2 Legit to Quit….Hey..Hey -did you just sing that in your head??? Me too.

After Ella’s performance, we headed to the Varied Industries building to check out the Balloon Farm exhibit and what the vendors had to offer. This balloon situation was crazy cool. A picture does not do it justice but I snapped a few anyway. We also picked up a Hawkeye Football poster (a must have) and Ella got a sweet Hawkeye tattoo.

And then came nap time. For mama this meant eating ice cream and people watching. I could spend hours doing that… is it just me??? I love to do this anyplace but the fair is on a whole different level.

Last, but definitely not least, we hit the rides. They had a really cool system this year where you purchased a bracelet that had a small tag on it and you were able to reload credits for rides to the bracelet via an app on your smart phone!!  This worked perfectly and eliminated the waste and nuisance of tickets!! Also, the new location for the little kid rides was great. Ella and I enjoyed a selfie on the Ferris Wheel 🎡

I’ll leave you with some –Fair Tips of Advice:

    1. Go to the Fair on a weekday. Seems less hectic and crowded. (My opinion)

    2. Go down the Big Slide it sways a little…but it’s a good time.

    3. Garlic Cheese curds always say YES.

    4. Try something new every year. Step out of your comfort zone. You will thank yourself.

    5. Bring extra clothes in case your toddler pees on you. Oh wait..maybe that’s just for me.

    6. Check out all the animals!!! So much hard work and dedication goes into those animals it’s truly amazing.

    7. If you haven’t been to the Fair for a couple of years I would encourage you to go and check it out. So much has been done to enhance the Fairgrounds and it’s something, as Iowans, we should be proud of.

    Talk Fall To ME

I simply can not believe that Fall is right around the corner. I’m holding on to summer like it’s my morning coffee. But all signs point to the season’s change. In Iowa, The Iowa State Fair starts today and while that’s exciting it also tells me summer is at a close. My husband and I are hoping to take our daughter to her first Iowa State Fair!! Blog Post to follow on that– no self respecting Iowa blogger can not do a blog on the Iowa State Fair.. am I right?? I love the Fair, the food, the people. If you have never been to the Iowa State Fair put it on your bucket list!!

Anyway, back to this Fall situation.  I am already thinking about cardigans, booties, and scarves. Social media is already blasting us with everything pumpkin spice so that also got me in the mood. I have been perusing my favorite brands/shops online and just thinking about my first fall purchase. So, I thought why not share what I’m looking at with all of you. It’s a small collection of boots, scarves, bags, cardigans, and jeans. It might give you some inspiration and help you find some deals out there too! Who doesn’t love a deal? Let me know if there is anything out there you are specifically looking for and I’d love to help you find it. Happy Fall🍁
